No-Bake Cookies
1/2 cup butter or margarine
3/4 cup granulated sugar
1/2 lbs. dates cute into 1/4' pieces
1 egg beaten
1 Tablespoon milk
1/2 tsp. salt
1/2 cups nuts (optional)
2 cups Rice Crispies
Shredded coconut (optional)
- Cook butter sugar, and dates over low heat, stirring constantly until mixture boils.
- In a small bowl, mix together egg, milk, vanilla, and salt.
- Add to date mixture and cook for 2 minutes.
- Cool
- Add nuts and Rice Crispies
- Form into small balls about the size of a walnut and roll in crushed nuts or coconut.
Variation: Roll mixture into a 2 inch log. Cool and cut into 1/4 inch cookies.
