1 to 1 1/2 lbs ground beef
1 package pepperoni
1 medium yellow onion - diced
2 cans of diced tomatoes (Italian)
3 cans of beans (pinto, black, white, kidney) any one kind or a mix.
1 small can diced green chilis
1/4 cup chili powder (or to taste)
6-8 cups beef stock or water
shreeded cheese
sour cream
In a frying pan, brown ground beef. Chop pepperoni into quarters. Add pepperoni and onions to the ground beef and cook until onions are translucent.
Pour meat and onion mixture into a slow cooker. Add tomatoes, beans, green chilis, beef stock, and Chili powder. Mix well.
Cook on high for 6 to 8 hours. Overnight on medium is good as well. The longer it cooks the better it is.
Server with shredded cheese and sour cream
