Coconut Bread

 4 eggs

2 cups sugar

1 cup vegetable oil

2 teaspoons coconut flavoring

3 cups flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

1 cup flaked coconut

1 cup chopped nuts (optional)


Glaze:

1 cup sugar

1/2 cup water

2 Tablespoon butter

1 teaspoon coconut flavoring


-Beat the eggs, oil, sugar, and flavoring together. 

-Mix the flour, baking powder, baking soda, and salt into a separate bowl. 

--Add flour mixture to the egg mixture alternately with the buttermilk.

-Mix very well and then stir in the coconut and nuts. 

-Pour into well-greased and floured loaf pans. Fill about halfway.

-Bake in preheated oven at 325degrees for about 45 minutes depending on the size of your pans. Toothpick test, and as soon as the toothpick comes out clean, take out. 

-While it is still baking, work on the glaze

-Boil the sugar, water, and butter for 5 full minutes. Take off the heat and add the coconut flavoring and pour the hot glaze on the hot bread. 

Let it cool before you take it out of the pans.
